
The coffee that you are drinking is likely stale. Coffee begins going stale the very moment that it is roasted and nothing can prevent it. Not special packaging or special storage (places such as the freezer) - The second hand of time just cannot be stopped. While it is difficult to get fresh-roasted coffee in America it is possible and it is well worth the effort and expense to obtaining it.
There is NO bitter in coffee that is fresh. Bitter is a function of old-age and so if you taste coffee that is bitter then you can be sure that it is old. (Heh heh, I had a grandpa who was pretty bitter in his old age as well.)
