Quinoa Salad with Artichokes & Parsley

Easy & tasty way to serve up Quinoa. Try this Quinoa Salad with Artichokes & Parsley. It is good warm and just as tasty for lunch the next day at room temperature.

I tried this recipe the other night.  It was light, easy and the leftovers tasted great the next day so I wanted to share it.

Quinoa Salad with Artichokes & Parsley

1 TBS olive oil

4 green onions

1/2 tsp fresh thyme

1 (9 oz) package frozen artichoke hearts, thawed

1 cup vegetable broth

1/2 cup uncooked quinoa

1 cup chopped fresh parsley

3-4 tsp grated lemon rind

1-1/2 TBS fresh lemon jiuce

1/4 tsp salt

Heat oil in a medium pan over medium heat.  Add onion, thyme & saute for 5 minutes.  Add artichokes & saute for 2 more minutes.  Add broth, quinoa & bring to a simmer.  Cover & cook for 18 minutes or until liquid is absorbed.  Remove from heat, stir in parsley, lemon juice, rind and salt.  Great warm or at room temp.  

Enjoy!
