Westborn Collaborates with Marais Chef for Plymouth Bistro

The bistro and market will be located in the former Plymouth Post Office; acclaimed Marais chef collaborating on menu.

PLYMOUTH, MI – Westborn Market plans to open a new 90-seat bistro in Plymouth’s former Post Office this spring in collaboration with the chef at the highly acclaimed Marais restaurant in Grosse Pointe.

Westborn Market — which features specialty meat, cheese, and beer and wine departments — also has locations in Dearborn, Livonia and Berkley. The Plymouth location will be smaller than the others, but the first with a restaurant, The Detroit News reports.

Twenty of the seats will be located inside the bistro, the other 70 on a patio. Beer and wine will be available immediately, and alcohol should be available fall with approval of a liquor license, Westborn publicist Kathy Vargo told the newspaper.

The former post office is “a cool, historical building and Westborn has worked with the city to preserve it,” Vargo said.

David Gilbert, the chef at Marais, won’t be leaving the Grosse Pointe restaurant. Rather, the Plymouth bistro will be run by two sous chefs.
