Executive Chef Colin Brown brings a culinary palette from across the globe to the new PARK 600 bar + kitchen opening mid-September in Downtown Rochester. Located inside The Royal Park Hotel, PARK 600 bar + kitchen is the newest spot for bold recipes created from locally sourced foods and exquisite cocktails. The restaurant brings a new Euro-urban spin to the heart of the 4-Diamond atmosphere for which the hotel has been known.

Featuring an open concept dining experience with shared tables and high-back booths along with a 24-person Alaskan marble bar and a gas-burning pizza oven with seating for 12, PARK 600 bar + kitchen truly is a get-away, just down the street.

“PARK 600 bar + kitchen will be a place for sharing stories while reconnecting with family or friends to enjoy a cultural adventure in food and drink. I’m privileged to share my culinary experiences with each bite,” said Brown.
Scotland born, Brown began working in the U.S in the late 1990s. PARK 600 bar + kitchen will join a list of world renowned hotels and restaurants on Brown’s resume which include Executive Chef for the Duke and Dutchess of Devonshire at the Devonshire Arms Hotel, Executive Chef at Hotel d’Angleterre in Switzerland and Specialty Chef at Walt Disney World.

As Executive Chef at The Royal Park Hotel for the past 10 years, Brown’s vision has been to bring dining in Rochester back to basics. “Food doesn’t have to be complicated to be good. We want to make the best dishes with the freshest ingredients to take guests on an adventure each time they come to the restaurant.”

Brown has been integral in bringing local ingredients to the Brookshire Restaurants and banquet events held at the hotel. PARK 600 bar + kitchen is the next step in his culinary vision to elevate the senses of each guest by sharing his passion for bold sophisticated flavors made from the most basic ingredients.

Much of the PARK 600 bar + kitchen’s menu will be seasonal and locally sourced. “We have several seafood dishes that will be created from fish that is caught that morning locally at farms such as the Indian Brook Trout Farm in Ann Arbor. Guests will be able to have some staple favorites, but also experience something new each time they visit the restaurant.”

PARK 600 bar + kitchen’s menu will include shared plates, specialty pizzas and seasonal recipes. A unique three-tier wine list from local wineries and refined cocktails from local distilleries, including Detroit City Distillery, make the PARK 600 bar the perfect accessory to Brown’s creations.

“We have taken the traditional craft cocktail recipe and elevated the flavor profiles by redefining the ingredients creating a more precise and balanced beverage that is smooth and easy on the palate,” said Jay Haratsis, General Manager, Royal Park Hotel. “Guests are going to experience something they’ve never tasted before.”
