Overview:  Rojo Mexican Bistro is an upscale establishment. With more than 100 tequillas and a menu heavily slanted toward seafood, Rojo is much different than any other Mexican restaurant in the area.

The Drinks: More than 110 different tequillas are available. Margaritas and various imported Mexican beers are in stock as well.

Appetizers: For both the experience and the flavor, do not miss the tableside guacamole ($8.99). Since it is made in front of you, the degree of spiciness, garlic, and cilantro is up to you. Be vocal, they listen. The lobster quesadilla ($15.99) might be expensive, but any lobster lover will enjoy this decadent treat.

Entrees: Tacos de Cayos ($17.99) are stuffed with plump seared scallops, Swiss chard, caramelized onions and chipotle tomatillo sauce. Mole de Gallina ($12.99) is made with chicken and is rich and full flavored.

Sides: Borracho bean stew is made with whole beans, a change of pace from the usual refried beans. Rice and refried beans are also available depending on the dish.  Also, seasonal vegetables and potatoes are served with some dishes.

Dessert: Tres Leches Cake ($5.99) is a milk soaked sponge cake with a layer of berries. Traditional and not overly sweet.

Signature Dish: Cazuela De Mariscos ($27.99) is the crown jewel of the menu. Sauteed shrimp, mahi-mahi, tilapia, scallops, mussels, clams, calamari, lobster, onions, tomatoes and cilantro all swim together in a smoked chili broth.
