Inside-Out 'Stuffed' Chicken With Mushroom Dressing

A Sunday dinner you can make any day of the week.

One thing I miss about living with my parents is the Sunday dinners. We still get together as often as our schedules allow, but it doesn't compare to those weekly dinners. With that in mind, I set out to find a Sunday dinner type recipe that was easy enough to make during the week in hopes that more families might see this and enjoy more meals together at the table.

When we meet for the occasional Sunday dinner now, my grandma Loretta usually comes over and bring with her old magazines for my parents to read. It was in one of these magazines, a Matha Stewart magazine from January, that I found my recipe. It's called inside-out "stuffed" chicken with mushroom dressing. As you'll see in the photo gallery, the chicken isn't acutally stuffed hence the quotation marks.

This recipe is exactly what I was looking for, a great combination of comfort food that is easy to mix and throw in the oven. Besides, who doesn't love stuffing.

To make this recipe you'll need the following:

  • 6 tablespoons of unsalted butter, plus one tablespoon butter softened
  • 1 large onion, thinly sliced
  • 3 celery stalks, thinly sliced
  • 3 garlic cloves, minced
  • coarse salt and freshly ground pepper
  • 1 pound of white button mushrooms, sliced
  • 6 cups of day old bread, cubed
  • 3/4 cups of chicken stock
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely chopped fresh sage
  • 1 whole chicken (approximately 4 1/2 pounds)
