Community-wide involvement is ensuring local families are able to celebrate the Holidays without Hunger
The Eagan area has come out in full force to help those in need this holiday season by creating and participating in food and fund drives for the Eagan Resource Center Pantry and their Mobile Pantry in Apple Valley.
“We have schools, businesses, churches, civic organizations, and individuals really opening their hearts to their neighbors in need,” says Executive Director Lisa Horn. “Participation in Project Pantry: Holidays without Hunger has been outstanding.”

And people of all ages have been involved. Preschoolers and their families at Primrose School raised funds, purchased and donated over 700 lbs of food; led by Bob Elliot, Eagan Boy Scout Troops and Rainbow Foods customers donated 3800+ lbs; students at Trinity school in Mendota Heights organized and collected 1,667 lbs; LSI employees donated enough food and funds for 2,039 meals; The O’Dell family of Burnsville has collected food donations each week at their home holiday lights display. “These are just some examples of the kindness and generosity that really show how aware—and responding—the Eagan and Apple Valley community is to those locally in need of food support,” Horn says.
