Introducing Scratch Pizzeria to Eagan! Say YES to delicious pizza and entrée recipies made with love and fresh ingredients. This unique Pizzeria (Scratch Pizzeria, Eagan) at 3450 Pilot Knob Road is a brand new fresh concept. Offering pizzas and delectable entrees and fresh salads. This will include doughs, sauces, even sausage all made from scratch with tried and true recipes. The staff will also smoke their own chicken and bacon and beyond. The staff has over 100 collective years in the pizza business. They will create some of the most delicious, delightful food in Eagan, so be sure to give them a try! Scratch Pizzeria menu will include pizza, pasta, sandwiches and authentic Italian desserts. In addition they will offer weekly specials not on the menu, possibly to include items or entrees requested by customers. The restaurant will include amazing non-alcoholic drinks including rootbeer floats and frozen virgin daiquiris and slushies, with the option of adding a favorite adult shot for an additional charge, as well as a variety of tap and bottle beer, select wine and limited spirits. The unique location and shared parking with Coles Hair Salon and the MN Transit Station is convenient for takeout, pickup, to-go’s. Or stop in for a quiet lunch or dinner or coming soon, limited delivery. Yankee Doodle Road and Pilot Knob Road is in the heart of Eagan. The owner and manager is Randall Cooper who is an Eagan icon and owner of Coopers Bar and Grill (Cooperstap15.com). He has owned and managed Coopers for over 23 years. Previous to owning Coopers while obtaining his BA degree at U of M, he created a successful lawn service while also managing Durning’s Fine Dining, currently named Casper's Cherokee of Eagan, which he later made his full-time focus until Richard’s on So. Robert Trail became available, now currently the home of Coopers Bar and Grill, Eagan’s hidden treasure at 4185 South Robert Trail. He also is the founding father of the non-profit Eagan Sports Association helping support Eagan male and female high school and middle school athletes in various ways. During his impressive Coopers Bar and Grill ownership, Randall has paid-it-forward financially co-starting several local start-up establishments. Saga on Diffley, currently Robert Street Trail Stop, Nina’s Russian restaurant in Burnsville, currently Tavern 13, and Wildcats Pub just a block down from Scratch Pizzeria. All have successfully generated employment and added exciting gastric variations for the Eagan/Burnsville residents. Coopers bar and grill is a top popular neighborhood favorite.
