A New Sushi Concept Restaurant is Coming to Eagan

A new sushi concept restaurant is coming to Eagan. SotaRol restaurants will take over the former location of Eagan Yogurt Labs (2000 Rahncliff Ct #200) in April.

But SotaRol isn't just any sushi place:

SotaRol's menu, accessible online, includes unique dishes such as the fried bagel roll, with salmon, cream cheese, and avocado topped with teriyaki sauce and spicy mayo, as well as the "Sota Veggie Roll," which features Japanese eggplant, asparagus, cucumber, and mango, topped with avocado and sweet chili sauce.

SotaRol also allows customers to order specialty items or build their own rolls and bowls, reports the Minneapolis Saint Paul Business Journal.
