Restaurant, Delayed By Shutdown, Plans Mid-August Opening
El Loro Mexican Restaurant will feature a full bar and a number of classic Mexican American dishes, including fajitas, enchiladas and carne asada.

The parting words of Alex Gomez on Wednesday afternoon were: "It will be worth the wait."
Gomez, the co-owner of El Loro Mexican Restaurant in Burnsville, was referring to his latest venture, a similar 5,300-square-foot restaurant that the business owner plans to open in Inver Grove.
A "Coming Soon" sign may be hanging over the entrance to the planned restaurant, but it will be roughly two more weeks before Inver Grove Heights' own El Loro opens its doors, Gomez said.

Gomez originally planned to open the restaurant on July 15, but his plans were . Thanks to the shutdown, Gomez was unable to get an inspection from the Minnesota Department of Health.
Roughly one week after the shutdown ended, Gomez says he has cleared the preliminary inspection, but needs a final round of inspections before he can open. Although he declined to give a specific opening date, Gomez said the restaurant will likely be open in the next two weeks.
