
These are delicious, chewy and just the pick me up you could ask for! Oh and of course, vegan!
Ingredients:
For rolling:
1.5 cups powdered sugar
1/2 cup raw sugar
For the Dough:
3/4 cup raw sugar
1/3 cup canola oil
2 tbsp brown rice syrup
1 tsp real vanilla
1/3 cup soy or almond milk
1 tbsp ground flax seeds
4 oz melted dark chocolate
1 3/4 cups whole wheat pastry flour
2 tbsp cocoa
3/4 tsp baking powder
1/4 tsp salt
Directions:
1. Preheat oven 325 degrees Fahrenheit
2. In a small bowl mix powdered sugar and raw sugar. Fluff it with a fork. Set aside
3. In a large bowl, mix all wet ingredients. Raw sugar, oil, rice syrup, vanilla, soy or almond milk. Add flax seeds and melted chocolate. Using a hand blender mix till smooth.
4. Then add flour, cocoa, baking powder and salt. Mix till moist/dough consistency.
(At this point you can let it sit for 20 mins or if you're like me...step #5.)
5. Scoop a tbsp in your palm, form a round ball. Then generously roll them in powdered sugar mixer set aside earlier.
6. Place them on a baking sheet lined with silpat.
7. Bake for 16 minutes. Let them cool on the baking sheet for 7 mins and then transfer to cooling rack.
