Carbone’s to Open Aug. 15, If Not Sooner

Additional construction at the restaurant in River Park Mall causes ownership to push back grand opening.

The co-owner of Carbone’s Pizza and Sports Bar in River Park Mall says there is a good reason the restaurant’s grand opening will be delayed for up to a couple of weeks: Construction.

Ownership has decided to enlarge the restaurant’s space—at 620 Water St.—into a portion of the neighboring parcel in the mall, said co-owner Scott LaMotte. Once construction in complete, the eatery will be nearly 4,000 square feet.

“Right now, we’re thinking Aug. 15 will be the drop-dead last day that we’d open,” said LaMotte. “We’re hoping to open a few days earlier, but that is up to the construction.”

The restaurant originally was scheduled to open Aug. 1.

Work inside the future Carbone’s has been ongoing for a number of weeks, said LaMotte. Recently, workers have installed the pizza oven and kitchen equipment, expanded the existing bar to 28 feet long and moved in high-top tables and chairs.

“I am looking forward to coming down to Northfield and bringing the kind of atmosphere and food we have at our Carbone’s sports bar in Burnsville,” said LaMotte, who also is co-owner of the Burnsville Carbone’s. “I think people are going to really enjoy what we have to offer.”

According to its website, the Northfield Carbone’s will feature a menu consisting of pizza, wings, ribs, burgers, pasta, sandwiches and wraps. As many as 20 flat-screen televisions will be installed.

“We’re going to be more than a place for pizza,” LaMotte said. “We have lots of great food, and we’re bringing something Northfield really doesn’t have right now, a sports bar.”

LaMotte said ownership is in the process of hiring staff. Some lead positions already have been filled, and those employees are training in Burnsville.

The restaurant will have about 20 full- and part-time employees, he said.
