1 1/4 cups all purpose flour

3 T butter (melted)

- To make the crepes, Mix all the ingredients in a mixing bowl until smooth. You will want the batter very runny with no lumps.
- On a medium non stick fry pan, scoop enough of the batter onto the pan to cover completely and form a thin crepe. Cook until the edges are a bit golden, flip over with a spatula and cook on the other side until cooked through. Both sides should be a golden brown. remove to a plate and cover with a clean cloth. Repeat with remaining batter until all crepes are cooked.
- For filling, Combine all the filling ingredients except 1 cup of blueberries in a medium saucepan and bring to a boil over medium heat, stirring constantly until mixture is the consistency of jam.
- Add the remaining 1 cup of blueberries and cook for 1 minute.
- Spoon the filling into the center of each blintze and fold sides around to form a rectangular package.
- In a large skillet over medium heat, melt 2 tablespoons of butter. Cook, seam side down, until golden brown, flip and cook until golden brown on both sides.
