PORK CHOPS WITH APPLE RAISIN SAUCE

Pork chops too mouth watering to pass by! The pork, apples and raisins are a perfect combination and will really please your palate! This is such an impressive dish and it is so easy and quick to make. I often times substitute dried cranberries for the raisins.

ingredients

  • 4 apples cored, peeled and cubed
  • 1 cup any flavored jam (peach, apricot)
  • 1/2 cup water
  • 4 tablespoons brown sugar
  • 1 cup golden raisins
  • 1 teaspoon cinnamon
  • 1/3 cup honey or maple syrup
  • 4 lg. 1 1/2" thick center cut loin chops
  • 2-4 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • salt and cracked pepper

directions

Add cubed apples to medium sauce pan. Stir in water, brown sugar, raisins, jam, cinnamon, honey or jam and salt.

Place sauce pan over medium heat and cook until tender about ten minutes.

Season pork chops and put in a skillet with hot olive oil and add the Worcestershire sauce.

Cook for 6-7 minutes per side. Do not over cook, only until pink is gone from middle of the chop or the meat will be tough and dry.

When chops are browned and almost done, add the apple mixture to the skillet and simmer for two minutes.

Plate the pork chops onto platter, top with the raisin mixture and drizzle any sauce left in the pan over the top of the chops.

notes

This dish has a total "WOW" factor! If you want to do something special for someone... this is it!

***  When frying pork chops, especially the "center cut", do not over cook them. Cook them until just done in the center. Over cooking causes them to become tough, but hey, you can just throw them in the crock pot in that case and let them cook all day. Either way, pork chops are good!
