Who knew one of the best butcher shops was located in the Department of Animal Science?
My sales manager, Shannon Hirstein, was doing the annual RVA University of Minnesota sales blitz a few weeks ago and she called on the Department of Animal Science. During the call she learned about the storefront they have for the University of Minnesota Meat Lab.
I don't know about any of you but I had never heard of it before. Apparently it is one of the best kept Roseville/University of Minnesota secrets – but one the Meat Lab would love to reveal to more people! Friend them on Facebook and you can watch each month for their specials.
The Meat Lab is where the staff supervises students who are able to use the skills they learned in the Animal Science Meat Science Program. The hours and experience here has resulted in state and national award winning meat processors – which is pretty cool in the world of meat processing.

They have spotlessly clean, first-rate facilities right here in the metro area - no back of the van selling steaks going on here! They offer a wide variety of fresh beef, pork, poultry, gourmet burgers and specialty sausages.
Looking for a recipe - they have some listed on their website. For growing families or hard core carnivores, they also sell it in bulk.

They also aim to please as you can call in or email orders for pick up on Wednesdays from 2 to 5 p.m. or call to request a specific pick up time.
I had to leave town for a trade show last week otherwise I would have stopped by, picked up a package of hot dogs to grill outdoors and let you know the results. Maybe I can do that next week…we will see how time goes.
