ST. PAUL, MN — The Minnesota State Fair has released its official list of new foods, drinks and vendors for 2026, adding 36 new menu items and nine new vendors to a lineup that already totals 1,600 food and drink options across nearly 300 concession locations.
The 2026 fair runs Aug. 27 through Labor Day, Sept. 7, at the fairgrounds in Falcon Heights.
Here is the full list of new foods and vendors for 2026.
1. Pickle Pie, LuLu's Public House. Pie crust filled with chopped pickles, pickle juice and cream cheese, topped with a ranch and Cholula frosting and a dill garnish.
2. Cracklin' Corn Ribs, The Blue Barn. Battered and fried corn cob quarters topped with bacon ranch, green onion, candied jalapenos and pork rinds.
3. Longanisa Cheese Curd Lumpia, Lumpia City. Filipino longanisa sausage and Wisconsin cheese curds rolled into a deep-fried lumpia wrapper, served with sweet chili sauce.
4. French Chouxnut Sundae, Bridgeman's Ice Cream. Salted caramel espresso ice cream stacked on a chocolate mousse-filled choux donut, finished with fondant icing and chocolate curls.
5. Korean BBQ Bao Buns, Rooted & Wild by Snack House. Plant-based shredded "meat" tossed in Korean barbecue sauce with pineapple slaw on steamed bao buns.
6. Surf 'N' Turf Burger, Cafe Caribe. Grilled beef patty topped with garlic-herb lobster and pepper jack cheese on a toasted brioche bun.
7. Butter Brew Mustache Pretzel, Blue Moon Dine-In Theater. Soft pretzel dough shaped like a mustache, coated in a caramel-vanilla-butterscotch butter brew mix.
8. Bao Belly, RC's BBQ. Smoked pork belly with hot sauce, yum yum sauce and pickled vegetables on steamed bao buns.
9. Blue Moon Crunch, Minnesnowii Shave Ice. Blue moon-flavored shave ice dusted with Fruity Pebbles and condensed milk.
10. Walking Chopped Italian Grinder, Mancini's al Fresco. Chopped Italian sandwich blend layered over Parmesan and garlic kettle chips with Calabrian chili aioli.
11. Shakshuka Lamb Meatballs, French Meadow Bakery & Cafe. Lamb and pork meatballs stuffed with whipped goat cheese, served over shakshuka sauce.
12. Dubai Whoopie Pie, Dino's Gyros. Pistachio cream sandwiched between dark chocolate cakes rolled in shredded filo and crushed pistachios.
13. Chorizo Manchego Croquettes, Paella Depot. Fried Spanish potato croquettes filled with manchego cheese and chorizo, drizzled with lemon garlic aioli.
14. Honey Brisket Battered Potatoes, Australian Battered Potatoes. Fried potatoes topped with beef brisket, nacho cheese and hot honey.
15. Hmong Corndog, Union Hmong Kitchen. Ginger, garlic and lemongrass Hmong sausage, battered and fried, made with Kramarczuk's.
16. Tacos de Mole, El Burrito Mercado. Deep-fried chicken and mole-filled tortillas, drizzled with more mole and queso fresco.
17. Jamaican Jerk Chicken Loaded Fries, Midtown Global Market's Irie Jamaican Express. Battered fries topped with jerk chicken, melted cheese and jerk sauce. Available Aug. 27 through Sept. 1 only.
18. When Pigs Fly, Sausage Sister & Me. Four pork sausage varieties wrapped in puff pastry, served on-a-stick.
19. The Fried and the Furious: Cubano Drift, The Herbivorous Butcher. Deep-fried vegan Cubano-style sandwich in a crunchy tortilla, served with jalapeno citrus sauce.
20. Strawberry Ube Sundae Tart, Sara's Tipsy Pies. Strawberry and ube marshmallow cream swirled into a fudge-filled shortbread crust.
21. Peri-Peri Bowl, Afro Deli & Grill. Peri-peri chicken, beef sambusas and fried plantains with a choice of spicy sauces.
22. Sligo Slider Bites On-A-Stick, O'Gara's at the Fair. Cheeseburger-stuffed dumplings, skewered and deep-fried, served with Thousand Island dressing.
23. Bucket of Chicharrones, San Felipe Tacos. Fried pork rinds seasoned with chili and lime, served with three dipping sauces.
24. Sweet Peach Lemonade Sparkler, Quench'd. Fresh lemonade layered with peach syrup and peach cold foam, topped with popping candy.
25. Elote Tots, Tot Boss. Tater tots tossed in Tajin and elote-style sauce with cotija cheese.
26. Caramel Apple Iced Tea, Loon Lake Iced Tea. Black tea brewed with tart apple flavor and caramel cold foam.
27. Strawberries & Blueberry Creme Parfait, Strawberries 'N Creme. Whole strawberries layered with blueberry non-dairy topping and gluten-free waffle chips.
28. Dockside Poppers, Summer Lakes Boat House. Breaded and fried cream cheese, bacon and artichoke blend, served with tomato chili jam.
29. Mango Sticky Rice Refresher, Chan's Eatery. Coconut and condensed milk blended with mango flavoring, topped with fresh and dried mango.
30. Strawberry Crunch Mini Donuts, Solem's Mini Donuts. Strawberry donuts dusted with vanilla sugar and homemade strawberry streusel.
31. Pumpkin Bar Funnel Cake, Taulelle's Jurassic Corn Dogs. Real pumpkin blended into funnel cake batter, topped with cinnamon cream cheese frosting.
32. Dill with it, Cookie!, Urban Glow Mocktails. White chocolate chips and fresh dill pickles baked into a cookie, finished with Maldon sea salt.
33. Two-Tone Bloody Mary Mocktail, Urban Glow Mocktails. Tomatillo salsa layered with a zero-alcohol tomato blend, garnished with a loaded skewer.
34. Dodopop, new vendor. A dirty soda vendor serving six flavors, including megalodon (Dr Pepper, raspberry and coconut cream) and sasquatch (root beer and vanilla).
35. Lemochi Japanese Confections, new vendor. Serves tanghulu, fruit skewered in a hard candy shell, in four gluten-free varieties.
36. Jive Turkey BBQ, new vendor. Serves smoked turkey barbecue dishes, including a mac and cheese bowl and stuffed turkey legs.
37. Apple Donut Ham Grinder, Minnesota Farmers Union Coffee Shop. Battered fried apples stacked with ham and hot honey on a toasted hoagie roll.
38. Midtown Global Market's El Taco Torro, new vendor. Serves birria crunch bombs and al pastor tacos. Available Sept. 2 through Sept. 7 only.
39. Brandy Old Fashioned Cookie Dough, Kora & Mila's Cookie Dough. Brandy-flavored cookie dough on-a-stick, dipped in chocolate and rolled in Biscoff crumbs.
40. Banana Butterscotch Barnraiser, Minnesota Farmers Union Coffee Shop. Vanilla pound cake layered with roasted bananas, butterscotch and croissant croutons.
41. Minnesota's Original Apple Fries, new vendor. Serves fried, cinnamon-sugar apple fries with caramel and apple cider.
42. Roon's Savories, new vendor. Serves savory waffle cones filled with options like BBQ pulled pork mac and three cheese mac.
43. Summer Lakes Boat House, new vendor. Opens in a new building with shrimp skewers, sliders and daily live entertainment.
44. Solem's French Fries, new vendor. Serves fresh-cut fries in four sizes with a self-serve sauce bar.
45. Saturday Dumpling Co., new vendor. Serves fried Chinese sausage and cheese poppers and ube cheesecake wontons. No photo was available for this vendor at time of publication.
