
This is one of my favorite lunch recipes, quick and easy... and delicious too!
Power Cottage Cheese
Serves 11/2 CupΒ Cottage Cheese (I like the Organic Valley and Daisy brands
1/6 CupΒ Dried Cherries (watch out and avoidΒ corn syrup)
1/4 CupΒ Walnuts (raw is best- if available)
Small Pinch ofΒ Cinnamon (organic, if available)
Mix all ingredients together and enjoy!
