We're having a heat wave... A tropical heat wave!

OK, maybe that's a bit of an exaggeration but the temperatures are supposed to finally crack 30 over the next week! For us native Minnesotans that's almost shorts weather!
So... dust (or shovel) off that patio and grill and make some fantastic smoked or grilled chicken- for you non-native Minnesotans this roasts well in the oven too!

OK, this is extremely simple and yet will have your guests wanting more!

Here's the recipe-

1 (or more) whole chickens (split in half)

2 Tablespoons (per bird) of AP- All Purpose Blend or AP Spicy if you prefer... get yours here-

Smoke, Grill, Oven Roast... It's up to you!

How do you split a chicken?

Great question- With a sharp game or kitchen shears remove the back bone, flip the bird over and cut completely through the center breast plate and there you have it- 2 halves!

Rinse the chicken well and pat dry.

Cover liberally with AP or AP Spicy, just like the photo below.

These were done on a smoker with Pecan and Apple wood pellets for about 4 hours at 250 degrees.

This can also be cooked on an in-direct heat on your charcoal or gas grill- Sear first on a medium hot grill then turn to the lowest setting and cook until the internal temperature of the meat is at least 175 degrees (fall apart done).

Baste with your favorite sauce (although it really doesn't need it!)

Serve as half chickens or pull the meat and enjoy!

This particular large batch was all pulled, sealed in vacuum bags, and enjoyed frequently on nachos, quesadillas, pulled chicken sandwiches, chicken salad... well, you get the idea!
