2 onions, sliced
3Â bell peppers, slicedÂ
1/2 cup beef stock (or water or red wine)
1 lime, juice of
Method
- Place the sliced meat, onions and peppers in the crock pot (6 quarts).
- Add seasoning and liquid.
- Cover and cook on for eight hours on low or six hours on high, or until meat is tender*.Â
- Pour the lime juice over the meat and serve with your choice of fajita toppings.
*The longer the meat is cooked at a lower setting, the more tender it will be.
Some possible fixings for the fajitas are tortillas, sour cream, salsa, lime segments, minced onions and chopped cilantro.
Fajita Seasoning
Ingredients
2Â tablespoon cornstarch
1 tablespoon plus 1 teaspoons chili powder
2 teaspoons salt
2 teaspoons paprika
2 teaspoons sugar
2 teaspoons chicken bouillon powder
1 teaspoons onion powder
1 teaspoons garlic powder
1/2Â teaspoon cayenne pepper
1/2Â teaspoon cumin
Method
- Mix all ingredients together.
