Shorty's Mexican Roadhouse was a staple on Route 101 for 16 years.
From 1991 through 2007, the local chain provided Bedford residents with traditional Mexican fare.
The past four years have seen two other similarly-themed restaurants attempt and fail to succeed at the same location, but Shorty's founder Rick Loeffler and his partner, Jay Delmonte, believe they have found the winning formula.

Taking some of the most popular items from the Shorty's Mexican Roadhouse menu and adding new "hearty" items such as meatloaf, and eventually prime rib, the restaurant promises to appeal to those who enjoy a spicy Mexican meal, and those who prefer a more traditional American meal, said Delmonte.
