Lexie's Joint Serves Up Peace, Love and Great Burgers

Islington Street eatery enjoys a loyal following thanks to its creative menu.

When Alexis Wile and her finance, K.C. Cargill, decided to open Lexie's Joint on Islington Street in February 2010, they decided to take the very traditional American hamburger to new creative heights.

The result is one of the most unique and delicious hamburger menus on the Seacoast. Their burgers are so good, in fact, that the trendy burger restaurant was featured on the Phantom Gourmet in December.

"I’ll try anything on a burger. I am very adventurous that way," said Cargill, who also serves as Lexie's chef.

Lexie's signature phrase that is displayed on the dining room wall says it all: "Peace, Love, Burgers."

What separates this business from others: I think that we do simple food that’s fun at the same time. I feel like we put a creative touch on everything we do here. We put the love and effort into it everyday, into the food, our drinks and the whole decor. I think it shows through on the food that we’re very creative. I’ll try anything on a burger. I am very adventurous that way.

What do you like about doing business in Portsmouth: I think the variety of people, the diversity of up here and the fact that a lot of people are very knowledgeable about food and enjoy food. Portsmouth is a destination area with the water and the close proximity of UNH. It’s a bigger draw than a Newburyport (Mass.) or Portland (Maine). It is super easy to open a business up here.

How do you give back to the community: Our first thing we did was the Paws Walk in Stratham by the NHSPCA and we have given out many certificates to help people who are doing charity auctions and for the schools. We won’t just give out a regular gift certificate, I will go and cook a dinner for four at your house.

Future goals: We would like to expand where we would keep this location and open another one. I am not saying that we would like to be the next McDonald’s, but we would like to be in some other areas. We would like to just keeping making a good food product and keep our customers happy. Keep spreading peace, love and burgers.
