Ice Cream Sundae Tacos

Want to try a different spin on an ice cream cone dessert for Cinco de Mayo??? TACOS!!! That's right, and I bet your guests will think your dessert is delicioso!

Thinking of having a party for Cinco de Mayo?  Or maybe you’ve been invited somewhere and
offered to bring dessert.   What to bring…..what
to bring….  Here’s a creative, easy and
show stopping dessert that I found in a magazine and tweaked to my liking.  Can you use tacos for dessert?  Absolutely!! 
Here’s how.  Buy the stand ‘n
stuff taco shells and line them up on a cookie sheet.  Thaw some of your favorite ice cream flavors
for about 10 minutes and then scoop about 2 scoops into each taco shell.  Put the cookie sheet in the freezer for about
2 hours so the ice cream will refreeze inside the shell.  Now here comes the fun and creative
part.  You can make a chocolate ganache
to pour over the ice cream in each shell or you can use whatever sauces you
want.  To make the ganache, you will need
to melt 6 ounces of semi-sweet chocolate (cut into pieces) in the microwave
until smooth, mixing often.  Add 6 T cold
butter, cut into pieces, and 1 ½ T light corn syrup and mix until smooth.    Pour
this over each taco shell so it forms a chocolate layer over the ice
cream.  If you want to really give your
guests some yummy options, try melted peanut butter, softened marshmallow
fluff, caramel, melted white chocolate, or strawberry syrup, to name a few.  This could be a fun activity to do with your
kids or with adults.  After you have
poured the sauce, add your favorite topping. 
The possibilities are endless!! 
You could do chopped nuts, chopped cookies, chopped candy, fruit, or
jimmies.  You have to make sure you spread the toppings fast so the chunks will adhere to the sauce before the sauce freezes onto
the ice cream taco.   I recently brought this to a dinner party and used
chocolate chip and heavenly hash ice cream. 
I made the ganache and added reeses pieces, milk duds, and snow caps to
the tacos.  It was a hit for both the kids
and the adults.  So have fun with your
desserts.  Have the guests join in and
make their own taco delight or make them ahead of time and WOW your
guests.  Happy partying!!
