Raw Foods: Carob Coconut Bites

A delicious raw food dessert that is sure to satisfy all cravings! Enjoy!

The idea of raw foods can seem daunting, difficult and even unappetizing. However, my experience with raw foods has proved opposite. Although I am not a “raw foodist,” I have incorporated as many “raw foods” into my diet as possible. Defined, a “raw foodist” is someone who only consumes uncooked, unprocessed, and often organic foods. There are many benefits to eating raw. The most broad of examples include higher energy levels, more vitality, and better hair, skin and nails. Raw foods are “living foods.” This means that the foods are in their natural state, unprocessed and uncooked. Raw foods are packed with nutrients and antioxidants that help to restore each cell in your body. Many people are uninterested in raw foods because they are either not knowledgeable on the topic or they feel as if leading a raw lifestyle would not be feasible. I don’t believe being 100% raw is practical for everyone, however, I do believe eating large amounts of raw fruits, vegetables, nuts, and seeds will positively change the way you look and feel. I hope my articles will inspire you to learn more about raw foods. I will be posting lots of different raw recipes. For now, I would love to share with you one of my favorite raw food desserts. Carob Coconut Bites

Ingredients:

3 tablespoons ground flaxseed (Omega 3 Fatty Acids)

½ cup carob chips and/or Cacao Nibs (tastes similar to chocolate)

                                                          (Vitamins and Fiber)

2 cups pitted dates (natural sugars, great for energy!)

½ cup raw almonds (Healthy fats, Fiber)

½ cup raw cashews (Healthy fats, Fiber)

½ cup unsweetened coconut flakes (Vitamins, Calcium, Protein)

 

Instructions:

1. Combine all ingredients in a blender

2. Roll into small bite sized balls

3. Roll balls in extra coconut if desired

4. Refrigerate and enjoy!
