Sack the Calories With These Super Bowl Snacks

Two healthy snacks that will help you stay away from calorie laden, unhealthy foods during Super Bowl festivities—or any other time you feel like munching!

On Super Bowl Sunday, it’s easy to overindulge in foods like chips, dip and frozen appetizers. Because the Super Bowl is such an important and exciting game, it’s understandable that many people don’t have time to make sure the foods they are consuming are healthy and low in calories.

So, I wanted to share with you recipes for two simple snacks that are healthy and delicious. The best part about them is that you don’t have to feel guilty about treating yourself to a second helping! (Or third!) 

Black Bean Salsa With Homemade Tortilla Chips

For the Tortilla Chips

6 flour tortillas (each about 7 inches)

Olive-oil or cooking spray

For the Salsa

1 can black beans

1 medium tomato; diced

1/2 cup fresh, thawed or canned corn (without added sugar)

2 scallions, finely chopped

1 jalapeño pepper, seeds removed; minced

1/2 cup chopped fresh cilantro

2 tablespoons freshly squeezed lime juice

1/2 teaspoon salt

Directions

  1. Preheat broiler.
  2. Rinse beans under cold running water

Salsa

  1. Place 1/4 cup black beans in the bowl of a food processor.
  2. Pulse until coarsely chopped; transfer to a bowl.
  3. Add remaining beans, tomato, scallions, jalapeño, corn, cilantro, lime juice and salt.
  4. Stir to combine and set aside.

Tortilla Chips

  1. Cut each tortilla into eight wedges
  2. Arrange on a baking tray and coat with cooking spray
  3. Place under broiler, and bake until crisp and golden brown, 1 to 2 minutes per side.
  4. Transfer chips to a wire rack to cool.

Serve salsa with chips and enjoy!

Fruit, Nut and Chocolate Trail Mix

Ingredients

1 1/2 cups mixed dried (your choice of) cranberries, cherries, apricots, raisins, pineapple, apples, bananas

1 cup pecans

1/2 cup almonds

1/2 cup dark chocolate chips

Directions

In a bowl, combine dried fruit, pecans, almonds and chocolate chips. Enjoy!
