CHATHAM, NJ - More than two dozens types of tacos from many regions in Mexico are represented as part of the story of Folklore Artisanal Taco, a new taqueria on Shunpike Road.

"Our specialty are tacos and we have more than 25 different tacos from all the regions and states in Mexico, each taco that you see in our menu represent a part in Mexico also you will find exotic tacos from Oaxaca like Grasshopper, Homemade mole, tortillas and more," owner Sergio Capdevielle told Patch. "We use the term Artisanal because we use the original recipes we keep the same traditions and everything is made from scratch."

Capdevielle is from a small town in Puebla, Mexico called Teziutlán in the north Sierra of Puebla.

"I remember my parents have been making street tacos and selling those in street fairs and their own taquerias always receiving compliments about their tacos also I worked in a couple of restaurants in Manhattan so that is where my real passion started," he said.

Capdevielle said he remembered clearly where the dream of starting the business came from.

"I remember talking with my parents while we were having dinner in Mexico that someday we will have our own taqueria in USA," he said.

Capdevielle said that when his parents finally retired as a teachers, they saved some money and moved to America.

"And me and my wife Lindsey put together this dream with my parents," he said.

A current Montclair resident, with a location already open in West Orange, Capdevielle said choosing Chatham as a second location was an easy one.

"We chose Chatham because some customers from the same town told us about a good opportunity in a Shopping center so we spoke with the owner," he said. "He helped us with a good deal also doing some research we decided that it was a good market for tacos."

With a menu that vows to "Make Tacos Great Again" anywhere may be a good market for tacos.
