Vegan Lunch Event Sponsored By Chatham High School Students

CHATHAM, NJ — Chatham High School held a vegan lunch day to honor Earth Week by making food choices that reduce emissions.

This event was co-organized by the CHS Green Team, the school's environmental club, and the TEDxYouth@Chatham students, who coordinate and host TEDx events in the community.

Mexican Spice, a Chatham-based restaurant, provided a food truck to serve a vegan lunch to students and staff members.

Mexican Spice made their Mexican Bowl with cauliflower and garbanzo beans, roasted corn and zucchini. Tortilla chips, guacamole and churros were also available to students and staff.

The lunch event was held as a follow-up to the Winter Climate Countdown event hosted by the Green Team and TEDxYouth@Chatham. Students watched a TED talk by vegan chef Derek Sarno and discussed the climate implications of the typical American diet, which is heavy on meat and dairy.

At this event, students expressed an interest in vegan food options, and these clubs took advantage of the opportunity to invite students to try vegan cuisine.

“When Mexican Spice agreed to work together with our team I was beyond pumped! We had a great turnout and a lot of excitement around the event. I mean what makes sustainable food choices even better— when they are delicious, of course,” said team member Maddie Boland.

The lunch event is also related to the theme of this year's TEDxYouth@Chatham, "Purpose."

This year's TEDxYouth@Chatham event will take place live on June 10 at 7 p.m. in the Chatham Performing Arts Center and will highlight some ideas and outcomes from this year's collaborations between the Green Team and TEDxYouth@Chatham.
