In 2003, some college friends were up late in a University of Pennsylvania dorm room, wishing they had better late-night food options. One of them was Seth Berkowitz, who went on to found Insomnia Cookies, which now has more than 275 locations serving fresh, warm cookies nationwide.
Most stores begin deliveries at 10 a.m. on weekdays and noon on weekends, going until 3 a.m. each night. Along with warm cookies, the bakeries also serve ice cream and brownies.
