
Asiago crusted pesto grilled cheese sandwich
2 slices of your favorite Italian bread
softened butter, enough to butter bread
slices of fresh mozzarella ,enough for 1 sandwich
basil pesto (recipe below)
Finely shredded asiago cheese..(you can use any of your favorite cheeses that shred well)
Heat a pan over med.heat
Butter the outside of each slice of bread then butter side down place on the shredded cheese
Place into hot pan,now add a layer of mozz. and your pesto and repeat with the top slice of bread i.e. butter and dip into the cheese.
Grill till you have a nice cheese crust and carefully with a long flipper turn sandwich over to crust the 2nd side and to completely melt the mozz.
basil pesto:
2 cups of fresh basil leaves
1/4 cup of pine nuts (if you can, toast them)
2 cloves of garlic
Juice of half lemon
1/2 cup of grated Parmigiano Reggiano
1/4 cup of Olive oil
salt & pepper to taste
Mix everything together in food processor except the oil.
Once everything is mixed well, drizzle with oil.
Mix until well blended.
Serve on pasta or just about anything that needs a pick me up.
Store in fridge.
