Baby Bok Choy Fried Rice

Baby Bok Choy Fried Rice
INGREDIENTS
4 baby bok choy chopped
2 Tbs canola oil
¼ cup Hoisin sauce
2 tablespoons of garlic stir fry sauce
2 eggs, lightly beaten
2 cups cooked rice 
2 tbs sesame oil
1 med sweet onion, chopped
1 cup frozen peas, thawed
1 medium size carrot in small dice (put the tiny diced carrots into a glass measure cup add water to cover an put into micro for 2 minutes, drain an put aside)
2-3 tablespoons soy sauce (more or less to taste)
2 tablespoons of fish sauce
2 Tbsp chopped green onions (optional)

INSTRUCTIONS

Preheat a large sauté pan with the canola oil on med. heat. Add the bok choy and sauté till soft. Add the hoisin sauce and garlic stir-fry sauce. Lower to simmer and preheat another large skillet or wok to medium heat. Pour sesame oil in the bottom. Add med. onion,peas and carrots and fry until tender.
Slide the onion, peas and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
Add the rice to the veggie and egg mixture. Pour the soy sauce on top. Stir fry the rice and veggie mixture until heated through and combined. Add the whole rice mixture into the bok choy pan and stir to combine. Add in the fish sauce and stir. Add chopped green onions if desired. Serve.
