EAST BRUNSWICK, NJ — A food truck that made its name on bold Mexican street-inspired dishes has found a permanent home in East Brunswick.
The Mexi-Boys will open its doors on Saturday, Nov. 7, at 1031 Route 18, Building 2, Unit B, along the township's Route 18 Business Corridor.
Mayor Brad Cohen, Economic Development Officer Rob Zuckerman and members of the East Brunswick Regional Chamber of Commerce marked the occasion with a ribbon-cutting ceremony ahead of the opening, according to a township announcement.
"We're excited to welcome The Mexi-Boys to the Route 18 Business Corridor here in East Brunswick!" the township said.
The business got its start as a food truck before expanding. Through that growth, the owners say they've kept a simple mission: to "turn everyday meals into shared moments worth celebrating."
