EAST WINDSOR, NJ — Bubbakoo's Burritos has officially opened its doors in East Windsor, marking the latest addition to the township's restaurant scene.
Mayor Janice S. Mironov and council members David Russell, Richard Eland, Joseph Miczak, Johnnie Whittington, and John Zoller joined business owners and staff for a grand opening ceremony at the new location in the Carduners Center, at the intersection of Route 130 South and Princeton Hightstown Road.
Bubbakoo's Burritos is a Mexican-fusion restaurant with a menu built around freshness and customization, offering bowls, burritos, tacos, quesadillas, and taco salads. The chain was founded in Point Pleasant and began franchising in 2016, growing to more than 150 locations across 17 states. In 2024, Bubbakoo's Burritos landed on Entrepreneur Magazine's 46th Annual Franchise 500 list as a fast-growing, high-performance brand.
"The Township welcomes Bubbakoo's Burritos, a fast-growing popular casual food option to our many diverse restaurants and eateries," Mironov said. "They have occupied a highly visible location at the prime Route 130/571 intersection which surely will attract attention and patrons."
