HILLSBOROUGH, NJ — Hillsborough couple Joe Trani and Kari LaSpisa are celebrating their first anniversary since opening The Fresh Fig in their hometown.

The Fresh Fig at 640 Route 206 inside of Hillsborough Village Center (behind Bottle King), unit 130, will mark its first year in business with a weeklong anniversary promotion built around local gift baskets and in-store raffle entries.

LaSpisa said customers who make a purchase during the first week of August will be able to enter drawings for baskets made with gift cards and products from other nearby businesses.

LaSpisa described the event as a way to celebrate the milestone while also highlighting businesses that have supported Fresh Fig over the past year.

"I’ve gone around to some local businesses and purchased gift cards to other local businesses because I really feel like people love that sense of community," LaSpisa said. "Every time you come in here and buy a salad or a sandwich, you will get a raffle entry, and then you can choose which gift you would like to throw your name in the bucket for."

Beets and Sweets Salad

The Fresh Fig will display the baskets in the store during the week and then draw winners that Saturday.

Businesses mentioned as part of the promotion included Simply Sweets by Lauren, Z Nails, Petrock's and Bentley’s.

Additionally, LaSpisa said The Fresh Fig is preparing a gourmet basket with imported products and a cooler filled with Italian beverages and a sweatshirt from the shop.

Additional basket reveals are being posted on Fresh Fig’s social media at instagram.com/thefreshfighillsborough.

The anniversary comes as Fresh Fig says it has expanded beyond its original salad-focused concept.

Ischia Sandwich

The shop now has a sandwich menu with hot and cold sandwiches, light bites such as burrata bruschetta, avocado toast and a side of meatballs, and imported Italian gelato.

While the business is takeout-heavy, customers also stop in for lunch with plenty of seating indoors and outdoors.

Fresh Fig continues to offer made-to-order salads, build-your-own options and catering.

"I cannot believe it’s been a year. Time has really flown by," LaSpisa said. "It’s been great. I think that this concept has been really well received."

When LaSpisa and Trani first opened The Fresh Fig, they both believed this concept was missing in the Township.

"I still believe what I believed a year ago: that this was something missing in town, and that there was a space to fill," said LaSpisa. "I think that we're doing our best to try to fill that and give the people what they want."

The Fresh Fig is open Monday to Saturday from 11 a.m. to 8 p.m.
