Franchisee Charles Tum-Baah is a Hudson County native, born and raised in Jersey City.

The company said, "Though this is Charles’ first restaurant venture, the food industry as a whole has been a part of his life since early on with his family owning and operating a West African food business that imports food and spices to restaurants in the Tri-state area."

“I am excited to bring Brooklyn Dumpling Shop to Hoboken," said Tum-Baah. "Partnering with a franchise that has a household name like Brooklyn Dumpling Shop carries a prestige and subtle touch that complements the Hoboken swagger."

The restaurant will feature Automat contactless ordering.

Chef Stratis Morfogen recently brought new flavors and ideas to the chain, with a new entree option called Brooklyn Chop Chop Bowls. They have a base of rice, noodles, or greens, then select proteins like grilled or crispy chicken, plant-based chicken, or shrimp, along with various sauces.

"These new entree options follow success of the recent launch of the Cro’sumplings, a flaky croissant like breakfast dumpling filled with bacon/egg/cheese, sausage/egg/cheese or spinach/egg/Feta cheese," said a release.

Those options will be available in Hoboken, the company confirmed.

Hoboken Evolution

The Hoboken location has maintained some of the facade and historic clock from the past. In the late 1980s and early 1990s, it was the hip bookstore Blackwater Books. Decades before that, it was a furrier, according to one source.

Spot Ol' Blue Eyes.

The shop passed its health inspection Sept. 21, 2022.
