Spring time is finally making its way to NJ and Easter is just around the corner. This holiday is a great opportunity to bring out some wonderful lighter, spring like recipes for your family. Today I'm sharing with you 6 Mouth-Watering Easter Recipes that I think you'll love!

Lets start with a really wonderful and simple appetizer shall we? Eggplant Caponata is such a flavorful dish that is really rather simple to throw together. A little bonus is that it tastes even better if you make it a day or two before so that makes your life easier too! Serve with a fun variety of crackers or crostini and enjoy!

I like to have a small first course before serving my meal. Something simple, light and typically in the form of a salad. I think my Caesar Salad with Homemade Dressing is a perfect first course. The dressing is much lighter and brighter then the store bought stuff. Really delicious and you can make the dressing a day or two ahead of time!

Lets dive right into dinner next. I think this makes for a GREAT main dish for Easter dinner. My Pork Tenderloin with Apple Onion Gravy is simple to make and full of incredible flavor. The gravy is light, a little sweet, a little savory and a lot perfect paired with pork.

Ok! Side dishes next! I like to keep things as simple as possible because you should not be stuck in the kitchen all day not enjoying family time. These sides can all be made the day before then simply heated before serving. One of my go to sides is this one right here, Brussel Sprouts with Crispy Pancetta. The crisp pancetta adds a perfect texture and saltiness to the dish.

My Fingerling Potatoes with Roasted Garlic & Chives is a perfect pairing with the pork and sprouts. These are all about the garlic! I slow cook whole cloves in olive oil until they are tender and sweet. The flavor paired with chives tossed on the roasted potatoes is just heaven!

Dessert! I have to tell you, this Lemon Raspberry Tart is one of the BEST desserts i've ever made and while it may look complicated, I promise each element is absolutely do-able! A shortbread tart crust, lemon curd filling, swirl of raspberry sauce and raspberry whipped cream! You are going to love this tart!!
