For years several large importers were buying cheap honey from China that turned out to contain corn syrup, fructose, and other cheap sweetners that do not have the same properties as honey. That's why you should buy locally produced honey.
How do you make Tupelo Honey?
I have a pair of Tupelo trees in my yard, (also known as a Black Gum, Sour Gum, or Pepperidge) that are just about to bloom. If my honeybees collect nectar from this tree and I harvest the honey immediately I can call it "Tupelo Honey" (why is that expression so familiar?). Beekeepers can name their honey with specific plants if they collect the honey after that specific plant finishes delivering nectar. However, There is no way to control where the bees will collect nectar from (they will fly as far as 3 miles) but collecting after a major nectar flow from a specific plant is the best we can do.
