Recipe of Day-12.7.13

This is one of my favorite super simple lunch recipes that can be thrown together so quick! Eating healthy is always easier when the meals taste good & are quick to make.

What you need:

  • Arugula
  • Beets (canned or fresh, sliced or diced, any will do)
  • Goat cheese crumbled
  • Grilled chicken cubed and refrigerated. This is a great place to use leftover grilled chicken from dinner the night before!
  • Cucumbers (I prefer sliced)
  • A sprinkle of chia seeds (see my earlier blog for the benefits!)

Throw it all together in a bowl, toss around and add dressing if you would like.

I am not a huge salad dressing fan so I typically toss on some balsamic & lemon juice and voila!

If you do like salad dressing, don't drench  this salad in ranch please :) it is really delicious on its own and a very light dressing is all this needs, promise!
