Apple Cake with Spiced Rum Glaze

You walk onto the fair grounds, the smell of hay and food hits you as a faint warm breeze sweeps by. Oh, life is good.  We all love going to the county fair for one reason or another.  The kids can't wait to buy their ride tickets and pet the animals, and the grownups are wandering around trying to decide what yummy food they want to eat.  A county fair is the best place to find a collection of homemade pies, jams, cakes and goods too. Going to the county fair means a leisurely walk, stopping at each game to watch or play, eating food that you normally wouldn't eat, and possibly finishing the day with a firework display.   The county fair is always a great time and is quintessential to life in America.

About fifteen years ago, my husband came home from work and handed me this recipe titled, County Fair Apple Cake.  One of his customers had brought him a piece a few days earlier.  He liked it so much that he asked the man for the recipe.  If you can believe it, I put the recipe in my book and forgot about it all these years.  The other day I happened to come across it and I decided to whip it up for my husband.  I wondered if he would like it as much today as he did fifteen years ago.  I did make one small change to the recipe however, I used spiced rum to make the glaze.  I think it gives it a little something extra and really compliments the apples.  You certainly don't need to add the rum, you can simply use milk or water to make the glaze.  My husband couldn't remember who he got the recipe from, but, he still loved the cake.  Get the recipe at myagentchef.com
