Caffe Aldo Lamberti Becomes First in Cherry Hill to Compost Organic Waste

Caffe Aldo Lamberti, known for its ultrafresh seafood and extensive wine list, will now be known for something else: earmarking the vast majority of its waste to be recycled as compost.  It is the first Cherry Hill restaurant to participate in such a program.

Working with Organic Diversion, a food waste recycling company in Marlton, N.J., Caffe Aldo Lamberti’s food waste will be separated and recycled into compost, a fertilizer and soil amendment, and wind up in local gardens, parks and farms rather than landfills.  Among the destinations is Caffe Aldo Lamberti’s own on-site vegetable and herb garden.

“We’re very proud to participate in this program.  Our loyal guests know us and love us for our delicious, fresh food and excellent service, and now they can dine with us knowing that we’re helping the environment, that hardly anything is going to waste,” said George Katsikis, General Manager for Caffe Aldo Lamberti.  

Under the program, Organic Diversion develops an operations plan, supplies the equipment, and hauls away Caffe Aldo Lamberti’s food waste for composting. A monthly report shows them how much has been recycled. Organic Diversion’s program also includes training and education in food waste recycling for restaurant employees.  In addition to benefitting the environment, Caffe Aldo Lamberti may see a reduction in its waste disposal costs.

“Cherry Hill proudly wears the badge of trailblazer when it comes to recycling, and I suspect Caffe Aldo Lamberti will only be the first of many food businesses in the township to reduce waste by composting,” said Cherry Hill Mayor Chuck Cahn.  “If every restaurant in Cherry Hill were to ultimately follow suit, just imagine the impact this could have on the environment.”
