PRINCETON, NJ — A new dessert destination is coming to Witherspoon Street this June.
The Baked Bear, a chain specializing in custom-made ice cream sandwiches, will open at 41 Witherspoon St., the former home of The Bread Boutique, which has relocated to 16 Witherspoon St., the previous location of Kilwin's confectionery store.
Founded in San Diego in 2013 by childhood friends Rob Robbins and Shane Stanger, The Baked Bear grew out of Robbins' lifelong love of ice cream sandwiches. The two left their careers in 2012 to open a dessert concept together, launching their first store in Pacific Beach, California.
The chain has since expanded to more than 10 states, with five existing New Jersey locations. The Princeton shop will offer more than a dozen scratch-made cookies and ice cream flavors, allowing customers to build their own sandwiches by choosing cookies or brownies for the top and bottom and an ice cream flavor in the middle. Sandwiches can be rolled in toppings or served warm.
The menu also includes ice cream cups, cones and pints, cookies, sundaes, and Bear Bowls — warm cookie or brownie bowls topped with ice cream. Two rotating cookie-of-the-month flavors and a seasonal ice cream flavor round out the offerings.
