New Late-Night Bakery Coming To Red Bank

RED BANK, NJ — Prone to midnight food cravings? A new late-night bakery brand is soon set to open a new storefront in Monmouth County.

Insomnia Cookies, which currently has over 300 locations nationwide, will open a new store on Broad Street near Monmouth University in the coming months.

The new Red Bank location will mark the brand’s first store in the borough, and seventh location in New Jersey overall. A specific opening date has not yet been announced.

“Here to the rescue when that craving for something sweet hits (even at 3 a.m.!), Insomnia Cookies offers in-store, pickup, and delivery options for customers to experience the company’s signature warm, delicious cookies,” brand officials said.

Though the Red Bank storefront hasn’t opened yet, the bakery’s page on the Insomnia Cookies website lists late-night pickup and delivery hours that include:

Menu options at Insomnia Cookies range from the company’s signature cookies (with flavors like the Classic Chocolate Chunk to Snickerdoodle and Confetti Deluxe) to brookies, brownies, and blondies.

The bakery also has a full slate of vegan options, as well as a frequently rotating limited-edition menu.
