A Mother’s Day Brunch
Mother’s Day is Sunday. (Surprise!) It is not always convenient to eat at a restaurant on Mother’s day. It is much easier and more fun to stay at home and cook for the family (and I am not kidding). No waiting for a table or your meal, no crowds, and you can hear each other in conversation. Plus, you can kiss the cook!
Brunch is my favorite meal to make. My family (and friends) come to my house for Mother’s Day brunch and we celebrate my mom and my kids’ grandmother. (and all the other mothers who are there celebrating with my family) As long as I have my mother around, she comes first on mother’s day.

I compliment this meal with music, mimosas, flowers, and a lot of laughs. The Hash Brown Patty Egg Casserole recipe is one of my favorite brunch dishes. Add different meats or make it vegetarian and use only vegetables. Mix up the cheeses (Swiss cheese did not work well, so keep that in mind) – have fun.

Hash Brown Patty Breakfast Casserole
You may assemble this dish together the night before serving. Let it sit at room temperature in the morning for about ½ hour before putting into the oven to bake.
Bake at 350° for 1 hour – covered – then at 15 minutes uncovered
Grease a 9 x 13 baking dish.
Ingredients:
8-9 frozen hash brown patties (store brand works fine here)
make sure the bottom of the pan is pretty well covered with the patties
4 cups of shredded Cheddar cheese
1 cup of deli ham or 8 slices of cooked bacon – chopped
(Variation: You can add sautéed onions/peppers)
(Variation 2: add sliced cooked sausage links)
7-8 eggs(depends on the size of your eggs)
1 cup milk
½ teaspoon each salt and pepper
Squirt of hot sauce and/or mustard
Directions:
Place hash brown patties in a single layer in baking dish. Top the patties with your choice of meat and/or vegetables.
In a bowl, beat eggs, milk, salt/pepper, and hot sauce/mustard. Beat until eggs are foamy and appear light in color.
Pour eggs mixture over meat, cheese, & hash brown patties
Cover and bake as directed above. Edges will be golden brown and a knife inserted in the center will come out clean when dish is cooked.
Let sit for about 8 minutes before serving.
