Jessie Armstead was drafted by the New York Giants in the eighth round of the 1993 NFL Draft. During his career with the Giants, he was selected to play in the Pro Bowl for five consecutive years from 1997 to 2001. He retired from the NFL due to injury in 2004, but then in July of 2007 Armstead signed a one-day contract to officially retire as a New York Giant. The following year, Armstead joined the Giants coaching team as a consultant to assist in defense tactics and special projects.
