Cedar Crest Chef Shares Shrimp Primavera Recipe

Shrimp Primavera - Serves 4

Ingredients
- 8 oz tagliatelle noodles (or any pasta)
- 20 1 oz peeled and deveined shrimp
- 1 ¾ tsp kosher salt (divided use)
- 1 ¼ tsp crushed black pepper
- 3 oz extra virgin olive oil (divided use)
- 1 ½ tbsp. finely chopped fresh garlic
- 3 oz julienned zucchini
- 3 oz julienned red bell pepper
- 3 oz sliced mushrooms
- 1 tbsp parsley chiffonade
- 1 tbsp basil chiffonade
- 3 oz halved cherry tomatoes
- 4 oz pasta water

- Place the shrimp on a paper towel to dry for 30 minutes and pat dry.
- Bring half a gallon of water to a boil and add half a teaspoon of salt to the water.
- Place the pasta in the water and cook based on the recommended time.
- In a large fry pan bring two ounces of olive oil to 350 degrees.
- Salt and pepper the shrimp and add them to the oil.
- Sautée the shrimp until golden brown on each side and then remove from the pan and set aside.
- In the same pan, place the garlic and cook until golden brown.
- Add the zucchini, peppers and mushrooms to the pan and sauté till brown.
- Add the parsley, basil, cherry tomatoes, and shrimp to the pan and toss.
- Add the cooked pasta and the pasta water and toss everything until the water is absorbed.
- Separate into four plates and drizzle with the remaining extra virgin olive oil.
