Recent enhancements to The Campus Restaurant at William Paterson University are resulting in exponential success.

Recent enhancements to The Campus Restaurant at William Paterson University are resulting in exponential success. Changes were implemented by Sodexo, dining services partner at the University.

Sodexo General Manager Michael Forstoffer challenged Executive Chef Sean Morrell to create a tapas style menu and rotating action station.

Orchestrated by Morrell, upgrades involved quick, efficient service, a fresh selection of artisan foods and a relaxing, comfortable atmosphere.

Artesian flatbreads, fresh made petite sandwiches, homemade soups and a salad bar are offered daily along with a rotating buffet that includes a freshly prepared protein - from grilled chicken, braised beef pizziola to miso grilled salmon and a daily vegan selection.

A prepared-fresh food station features omelets made to order with shrimp, smoked salmon and goat cheese, pasta primavera with homemade pesto, or a Moroccan Souvlaki with fresh grilled lamb and homemade hummus.

“On Fridays, guests can choose from a selection of tapas which could include gazpacho shooters with grilled shrimp, veal meatballs in a smoked tomato sauce, ceviche or chorizo in red wine braised onions,” said Morrell.

“The most popular item has to be our Sushi Wednesday when we partner with the folks from ‘Mein Bowl’ of the Paterson Food Court,” said Morrell.
