BABYLON, NY — A popular late-night cookie chain is expanding on Long Island.

Insomnia Cookies will hold a grand opening celebration on Saturday for its new shop in Babylon.

The store at 55 Deer Park Ave. is the company’s second location on Long Island, following the opening of a shop at 730 Fulton Ave. in Hempstead.

Founded in 2003 by Seth Berkowitz, a University of Pennsylvania student who wanted warm cookies delivered late at night, Insomnia Cookies has grown into a national brand known for its fresh-baked cookies and late-night delivery service.

The company operates hundreds of bakeries across the United States. Stores typically stay open late — often until 1 a.m. or 3 a.m. — catering to customers looking for dessert long after most bakeries have closed.

Insomnia Cookies’ menu includes a variety of classic and specialty cookies, cookie cakes, brownies and ice cream, along with ice cream cookie sandwiches. The chain also offers delivery, allowing customers to order warm cookies directly to their homes.
