EAST HAMPTON, NY β€” A new business is set to open its doors at the storied space that once housed O' Malley's and Rowdy Hall in East Hampton.

The team behind the popular Springs Tavern & Grill is set to debut Lion’s Nook Bar & Grill in East Hampton Village, located at 10 Main Street in the Parrish Mews.

Lion’s Nook, the second restaurant from Parioli Hospitality, "will bring an elegant yet welcoming atmosphere to East End diners seeking exceptional food and warm hospitality," representatives said.

Paying tribute to Lion Gardiner, one of East Hampton’s earliest English settlers, Lion’s Nook also honors the beloved history of the space.

"The restaurant will be thoughtfully renovated to evoke a warm, classic English pub aesthetic," representatives said.

Alex Rossi β€” founder of Springs Tavern & Grill and son of acclaimed restaurateur Rubrio Rossi β€” will spearhead the new venture in partnership with Gary Fuhrman, an entrepreneur and longtime East Hampton Village resident.

Rossi and Fuhrman are long-time friends and collaborators who were looking to launch a new project together in the village, they said.

They will be joined by Raul Rodas as general manager and Fabian Rodas as executive chef from the Springs Tavern team.

Lion’s Nook will offer American cuisine featuring a blend of refined dishes crafted with fresh local fish, meats, and produce, alongside a selection of Tavern favorites such as its classic burger.

The restaurant will be open year-round for dinner, with plans to introduce brunch and lunch in the future.

Rossi said he looks forward to building on the success of Springs Tavern & Grill by bringing his "signature approach β€”great food, attentive service, and inviting ambiance" β€” to the establishment.

"Over the past four years, we’ve been incredibly well-received by the Springs community and beyond. Gary and I felt like it was the right time to introduce something new to the village. We aim to serve freshly prepared meals that appeal to a wide audience, offered at approachable prices and complemented by thoughtful service. Just as we did with Springs Tavern, we’re excited to honor the history of this location. Our hope is that guests will feel right at home in the warm, welcoming atmosphere of Lion’s Nook."

Lion’s Nook, located at 10 Main Street in the Parrish Mews, will open in early summer, starting at 4 p.m., seven days a week.
