Rico Martinez: Best Mexican Food Chef in the Hamptons

Rico Martinez, has perfected the taste I love for Mexican food. He has been at it for over twenty years at the Blue Parrot in East Hampton. His menus is a mix of healthy, tasty and desirable choices, usually with a fresh fish special daily. Due to the celebrity ownership of the Blue Parrot Rico gets to use only the highest quality ingredients unlike other Hampton's mexican restaurants. Another thing about Rico, he is just crazy about horses and spends his off season on the west coast being a cowboy with his horses.

Ten years ago, under the previous ownership, I worked at the Blue Parrot checking ID's at the door and part of my deal was Rico made me dinner on Friday and Saturday nights. Now his creations are the ones I crave all winter season while the Blue Parrot is closed. I find myself waiting for opening day every Spring and I am thankful for the present ownership for retaining the authentic Blue Parrot Chef. What I have found out is that there is a unique demanding group of patrons who share my joys. If you haven't been to the Blue Parrot ever or haven't been for a long time, give it a shot. . If you are looking for some cold drinks after a hot day at the beach or after running about the Hamptons, there is no better bar then at the Blue Parrot because bartenders Julia Rodriguez, Ashleigh Rodman and Barry McGovern have the expertise in making the best cocktails. The “Daily Happy Hour” at the bar is from 4pm to 6pm and again at 11pm to 2am. Lunch service starts at noon while dinner is served 5-10pm Monday through Thursday and 5pm to 11pm Fridays and Saturdays. Reservations (631-328-2583) are only available for parties of six or more.
