Chichimecas Opens Its Doors
New Main Street restaurant specializes in Mexican cuisine.
Chichimecas made its debut Wednesday, offering a Mexican cuisine and attractive decor in the former Estelle's Contemporary Barbecue.
Owners Bradley Pariente and Alejandro Gonzalez said the restaurant will specialize in traditional Mexican cuisine, especially that of the Oaxaca region. "I respect good things, "Gonzalez said. "In my opinion, Oaxaca is the best Mexican cuisine."
Initially, the restaurant will be open six days a week but, Gonzalez said, "When we are ready, we will be open seven days."

Gonzalez and his wife, Maria, also own the Oaxaca and Quetzalcoatl restaurants in Huntington.
Pariente and Gonzalez said they had been considering setting up a restaurant in Brooklyn but after talking with the owner of the building, realized Farmingdale offered more promise.

Pariente, with his wife, Aimerance, previously owned a disco and restaurant in Normandy, France. "We are happy to be here now," Pariente said.
Farmingdale, Gonzalez said, "has been very good to us."
