Jericho Siamese Swordfish
Ingredients
4 swordfish fillets about 1/2 pound each
1 tablespoon Allegro tequila lime seasoning
1/2 Whole Foods Market Thai Ginger Marinade
1 pound Go Stir Crazy Stir Fry Mix from Whole Foods
1 tablespoon organic brown rice vinegar
Method:
Season swordfish with tequila lime seasoning, set aside for 15 minutes. In a large skillet, add Thai ginger marinade and cook swordfish on both sides just until cooked (about five minutes on each side). Remove fish from pan, leaving the juices in the pan. Add stir fry mix and toss to make sure that all the veggies are coated and are beginning to cook. When veggies are just tender, return swordfish to the pan and toss. Add brown rice vinegar and serve.
