All pastries at La Parisienne—the new French bakery/cafe on 2116 Boston Post Rd. in Larchmont—are made from scratch by the in-house French pastry chefs.
When I visited yesterday, pastry chef Youssef Samba allowed me to wield a pastry bag as I swirled chantilly cream on top of delicate pastry shells, topped them with raspberries and, finally, fit them into pastry paper, ready for the refrigerated case.
Samba, who is from France originally, studied under Un des Meilleurs Ouvriers de France (MOT for short) winning pastry chefs. MOT is a prestigious craftsmen contest held every four years in France.
